Stupid Icebox Lemon Pie
You think you can't make a pie right? Well you just need easy pie recipes like this one! It doesn't get any simpler folks, make up this Stupid Icebox Lemon Pie for a yummy, tasty dessert without the fuss. Have fun!

Ingredients
- 1 baked pie shell
- 1 can sweetened condensed milk
- 1/2 cup fresh squeezed lemon juice
- 1 container Cool Whip
- lemon zest for topping and taste (optional)
Instructions
- Combine milk and lemon juice thoroughly, then blend in about 2/3 of the Cool Whip.
- Pour into the pie shell and top with remaining Cool Whip. Chill for about 2 hours.
- Sprinkle with lemon zest if desired.

I thought I was on a different recipe...LOL I would use 1 cup of heavy cream whipped. I really don't like Cool Whip.

try 2 cups of heavy cream, whipped, instead of cool whip. And for the caramel topping...make it yourself or make sea salt caramel for the topping!!!!! And I bet you will think you have gone to a sweet shop in Heaven.

sounds scrumptious. Being a New Zealander if was pleased to read Q. from faym and answer from knitting poodle but could you please advise the quantity in a 'container' of cool whip (or whipped cream as I will have to use???

it says a container and i believe that they come in 2 different sizes, a 16oz tub and a larger one maybe 24 oz. they are in tubs with covers on them. but like poodle said , if you cant find the brand name then I'm sure that a homemade whip cream will be just as great.

Could you please define cool whip. I am in New Zealand where we don't have anything with that name. Is it whipped cream? I would love to try some of your recipes if only I knew a substitute for the cool whip. Thanks

Cool Whip is a brand name. It is a creamy non dairy whipped topping. Similar to creme fresh or whipped cream. It is slightly sweet with a hint of vanilla. It freezes well and is good on everything! Hope this helped. I have used fluffy whipped cream in it's place before and got wonderful results. I haven't on this recipe, but I would say it's worth a try. How could it be bad? lol

mom has been making this pie for years.One of our favorites,we have even added a small can of well drained crushed pineapple to it delicious! We keep it in the freeer, almost like real creamy ice cream. Give it a try!!
